Cibo (American) - Fishkill, NY - 12/7/07

Cibo is the latest eatery to open on Main Street in Fishkill. On my first visit I only intended to buy a cup of coffee. Once I saw the breakfast options I
had to try one of their many egg sandwiches. In addition to the typical bacon, ham or sausage you can also choose from roasted pork or turkey. I
opted for the pork since it was  something I had never seen paired with an egg sandwich. The sandwich is served on a house baked roll and the roasted
pork was cooked to perfection. It's a fantastic egg sandwich and I highly recommend it. My wife also enjoys the egg sandwich this roasted vegetables. I
think it’s safe to say that Cibo has one of the best egg sandwiches in the Hudson Valley.

I went back on another visit to try out their lunch menu and it lived up to the high expectation set by my breakfast experience. They have a wide
variety of sandwiches and salads. The deli counter is filled with homemade options ranging from chicken satay to mac and cheese. I tried the Split
Pea and Bacon soup. We also shared the potato pancake and shrimp cake. The soup was well balanced with a nice depth of flavor, you can tell the
difference when it’s made in house. The potato pancakes were accompanied with a raspberry apple sauce and sour cream. I was even impressed with
the plating. Not something that you’d expect from a casual eatery. I have since become a regular patron of Cibo, their soups alone are worth it but I
really have enjoyed every single thing I have tried.

Cibo is run by a former CIA graduate who has a focus on fresh homemade food. As they boast on their website they have no brand name product with
fillers, and preservatives. I’m really excited that we have a casual place like Cibo offering quality well prepared food.
